Ingredients
25ml Cooper King Berry + Basil Liqueur
125ml Dunesforde Sparkling ‘Solaris’ Wine
* Fresh raspberry, to garnish
Glassware: * Champagne flute
Method: Pour the liqueur into a Champagne flute and gently top with the sparkling wine. Give the lightest of stirs to combine, and garnish with the fresh raspberry.
Cocktail History
To understand the Kir Royale, we first need to delve into the Kir, a classic French cocktail that combines white wine with crème de cassis (blackcurrant liqueur). The origins of the Kir date back to 1904, when a waiter named Faivre first mixed these ingredients at the Café George in Dijon, France.
The drink gained prominence through Félix Kir, a local politician, priest and World War II resistance fighter who became mayor of Dijon. To promote regional products, he served this delightful tipple at official functions, leading to its association with his name.
The Kir Royale simply substitutes champagne for white wine. The Cooper King version goes a step further, using a crisp, Yorkshire sparkling white wine and our luxurious Berry + Basil Liqueur, made from Yorkshire-grown raspberries.
Ingredient Focus: Cooper King Berry + Basil Liqueur
A luxurious, fruity liqueur, bursting with ripe Yorkshire raspberries and finely balanced with fresh basil and juniper.
All the raspberries used in this liqueur are grown locally on Spilmans Farm, and delivered by Richard Spilman himself every season. The gin used as the base for this liqueur is our very own Dry Gin, and the basil is sourced from York. It is hand distilled, bottled and labelled at the distillery, using 100% renewable energy.
This liqueur contains no preservatives or colourings so please store out of direct sunlight and enjoy within 6 months.

Hamper Partner: Dunesforde Vineyard
Established in 2016 by the Townsend family in Upper Dunsforth (just 13 miles from the distillery), this independent, family-owned venture is one of the UK's most northerly vineyards.
The inspiration stemmed from James Townsend's experiences in Tuscany, where he observed the dedication required to produce high quality wines. The family sought to replicate this passion back home in Yorkshire. After extensive research and site visits, they chose a local plot with favourable conditions, including natural frost drainage and a sheltered aspect, ideal for vine cultivation.
The vineyard's name, "Dunesforde," is derived from the village's mention in the Domesday Book, reflecting the area's rich history. Today, Dunesforde produces distinctive English still and sparkling wines, contributing to the growing reputation of English viticulture.
